How does anyone know if it was historically cold if no one has any idea what the actual temperatures were before the late 1800s?

Warmer than what. We have no
idea what the temps were summer
to summer before 1890 or so.
We know it was so hot in Philly
in the late 1700's that congress
took the summers off. How hot?
